(USA. FL. or San Juan PR)
3 or 4 green plantains
2 garlic cloves
1/4 C. milk or Chicken Broth
Marinate sliced onion in Vinagar for 2 hours
Boil peeled plantains in water to cover approx. 15 to 20 min. until fork tender. Add drained onion, cook 2 min, and mash with olive oil. Add milk to correct consistently. (Mashed potato) Add vinagar, salt, and pepper to taste. Serve warm as side dish.
May add crisp bacon and/or cheese if desired
