Christmas in the Dominican Republic:
One of our traditional Dominican Republic drinks

Christmas in the Dominican Republic:
Jengibre
('Ginger' Christmas drink)

Christmas in the Dominican Republic wouldn't be the same without a glass of 'heart-warming' Jengibre. It is a simple beverage, made using fresh ginger root for the 'warmth' and cinnamon for that seasonally spicy twist.

At Christmas in the Dominican Republic, one of our favorite times of year, it is a few degrees cooler than the humid and often stifling summer months...but when you live in tropical conditions all the time you do notice those few degrees in the evenings especially! So when you are out 'carolling' a warming cup of jengibre is most welcome...

To prepare this simple and traditional Christmas beverage all you need is:

8 cinnamon sticks

1 1/2 - pints of water - about 5 cups

2 - 3 oz of fresh ginger roots - 1/2 a cup

About 1 teaspoon Unrefined Sugar per cup (to taste)

Preparation:

  • Pour boiling water onto the cinnamon sticks in a pan of adequate size, and bring back to boil. Simmer the cinnamon for about 5 to 10 minutes until the flavor has been imparted and the water has taken on a hint of color.

  • While the cinnamon is simmering, peel and finely slice the ginger.

  • Add the ginger slices to the pan and let it all simmer together for another 5 minutes, if the water evaporates too much top it up again.

  • Strain the liquor, then add sugar, rather like making sweet tea, but the amount will depend on your preference.

  • When your guest come round, serve a lovely homemade biscuit (cookie) with it.

    This is a super winter warmer wherever you are in the world, and ginger is well known for having many positive healthy virtues, including keeping away 'colds' and settling the stomach.

    As it 'brews' this lovely traditional drink also fills the atmosphere with the aroma of that subtle seasonal hint of spice which lets everyone know it truly is Christmas in the Dominican Republic.
